Anastasia's Moon In the Microwave Medjool Date Treats

These are sure to get your moon out of the microwave - they are delicious!!

 

Take 15-20 medjool dates (remove the pits) and soak them in warm water for about 20 minutes. 

Place them in a food processor with 2 tablespoons of your favorite nut butter (SECRET HINT: I am OBSESSED with vanilla Oat Haus Granola Butter - 100% highly recommend using this for guaranteed super powers). Pulse until smooth. You can add a teaspoon or two of the warm date-soaked water if it seems dry. Add a pinch of salt too.  

Scoop out by the tablespoon and place onto a piece of parchment paper on a plate and then put the plate in the freezer. After about 15-20 minutes, pull the plate out and the mixture should be cool enough that you can shape the date mixture into small balls. Put it back in the freezer for about an hour.

Melt some chocolate chips in the microwave (or in a double boiler) and pull the date balls out of the freezer. Dip the balls into the chocolate and then place back onto the parchment paper and use a knife or spoon to smother (yes, smother) the rest of the date ball in the melted chocolate. Top with crushed nuts, or sprinkles or anything else that sounds good to you.  

Put back in the freezer for about another hour - and then ENJOY!! They are so decadent and caramel-y and delicious and I hope that you enjoy the WHOLE process of making them and savoring them and that it helps you discover a fun new energy amidst whatever you are experiencing in your day.
